Easy Vegan Collard Greens with Rice





















ingredient:
1  for collard greens salad 
1 cup white rice
-green pepper 
2 cups vegetable broth
1 tablespoon butter 
½ teaspoon salt
¼ teaspoon red pepper flakes 
Pepper to taste
Cayenne pepper to taste

how to make it:
  • In a large pot, bring vegetable broth to a boil. Add rice, , salt, butter and red pepper flakes.
  • Add collard greens and bring to a slow simmer. Cover and allow to cook until rice is soft and broth is absorbed, about 15min  ,add more broth if necessary.
  • Add a dash of black pepper and more salt to taste. For a spicier dish, mix in ¼ to ½ teaspoon cayenne pepper before serving

Soup of citrus fruits


Preparation time: 30 minutes
Cooking time: 5 minutes


Ingredients (for 6 people):

- 5 pink grapefruits
- 5 oranges
- 5 clementines
- 2 tablespoons honey
- 1/2 teaspoon of ginger powder
- fresh grated ginger

Preparation of the recipe 

Detail all the citrus fruit in a salad bowl.
Squeeze the juice into the rest of the skin once the citrus fruits have been quartered on top of a saucepan.
Add in the same pan the honey and the ginger. Heat to allow the honey to melt. Pour the still warm on the citrus salad.

Watercress Soup


Preparation time: 20 minutes
Cooking time: 40 minutes

Ingredients (for 4 people):
- 1 beautiful bunch of watercress
- 3 medium potatoes
- 1 shallot
- 1 beautiful thyme branch
- 1 tablespoon of butter
- 1 cube broth
- 1 liter of water

Preparation of the recipe :

Wash and clean watercress to remove excess stalks.
Peel the potatoes, and cut them into cubes.
In a large saucepan, heat the butter. When it begins to sizzle (without burning), add watercress, potatoes, coarsely chopped shallot and thyme.
Let the cress soften and add the water and the cube broth.
The water should cover the vegetables with at least 2 fingers.
Stop cooking, when the potatoes are very tender and crush with a wooden spoon.
Once the preparation has warmed, remove and keep a little broth.
Mix the vegetables and add the broth set aside, to obtain the desired consistency.

Vegetarian Couscous

INGREDIENTS
2 canned peaches in syrup
3 carrots
3 carrots
2 courgettes
turmeric
chopped parsley
olive oil
salt pepper

how to prepere:

STEP 1
Peel and cut the carrots and courgettes morceaux.Faites cook them in a pan of boiling water for 15 minutes
2ND STEP
Drain late cuisson.Pelez échalotes.Egouttez and chop and cut the peaches in syrup into pieces.
STEP 3
Heat 2 tablespoons olive oil in a poêle.Faites shallots until translucent.
STEP 4
Add the carrots and zucchini and cook 5 minutes.
STEP 5
Finally, add the peaches, turmeric and parsley and cook for 5 minutes. Salt and pepper.
STEP 6
Serve hot mixed with couscous.

Soup Thai shrimp or chiken

Preparation time: 20 minutes
Cooking time: 20 minutes

ingredients:

3 chicken breasts into strips or 16 large raw shrimp
- 40 cl chicken broth
- 25 cl of coconut milk
- Sections 3 stalks lemongrass
- 15 slices of galangal (or ginger)
- 2 or 3 bird peppers cut into strips
- 1 broccoli, cut into small flowers
- 1 sliced carrots
- 100 g straw mushroom (straw mushrooms) skitakés or Paris mushrooms, sliced
- 3 tbsp nam pla (fish sauce or)
- 4 tablespoons lime juice
- Chopped fresh cilantro
Preparation of the recipe :

Peel, cut, chop all the ingredients.
Bring broth to a boil. Reduce heat, add the lemongrass, ginger, chilli.
Add broccoli, carrots, chicken in chicken version (especially not the shrimp !!) and coconut milk. The vegetables should remain crisp, but not too much (you be the judge and make according to your taste).
Add the shrimp in the shrimp version and the nam pla and lemon juice and simmer 3 to 4 minutes, until shrimp are pink.
Remove from heat, sprinkle with coriander. Serve with a bowl of fragrant rice.

Vegetable samosas

Preparation time: 25 minutes
Cooking time: 35 minutes

Ingredients :
- 20 ml oil
- 1 onion
- 1 clove garlic, crushed
- 175g diced carrots

- 225 g of potatoes, diced
- 1 red pepper, diced
- 100 g of peas
- 1 teaspoon cumin seeds
- 2 tablespoons curry paste
- 3 tablespoons mango chutney
- 2 tablespoons of chopped coriander
- 16 sheets of filo

Preparation of the recipe :

In a skillet, heat 2 tablespoons of oil.
Saute onion and garlic 1 min. Add carrots, potatoes and peppers. Stir 5 min.
Add cumin and curry paste.
Mix with 4 tablespoon of water, cover and simmer 5 minutes over low heat.
Stir in peas, chutney and coriander. Remove from heat.
Cut filo sheets in half lengthwise. oil the brush.
Remove some stuffing into a corner and close to the triangle.
Fry the samosas 5 by 5 in the rest of boiling oil, 2 minutes on each side and drain well.

soup carrot with coconut milk

Preparation time: 15 minutes
Cooking time: 30 minutes

Ingredients (serves 6):

- 600 g carrot
- 1 large onion
- 1 m of water
- 20 cl of coconut milk


Preparation of the recipe :


Boil water.
Brush carrots, then cut them into washer.

Place all in boiling salted water and cook for 30 minutes over medium heat.

CABBAGE SOUP VEGETARIAN

INGREDIENTS:

600 g onions
550 g of Savoy cabbage

23 ml of rapeseed oil
35g unsalted butter
3 g of sugar
5 g of salt
2 g of ground pepper

700 ml partly skimmed milk

PREPARATION:

STEP 1

2ND STEP
Heat oil and butter in a saucepan over medium heat. Add vegetables, sugar, salt and pepper. mix everything, cover and cook 25 minutes over very low heat.
STEP 3
Add the stock, bring to boil, cover and simmer 15 min. Add milk, heat and check the seasoning.
