CABBAGE SOUP VEGETARIAN

INGREDIENTS:

600 g onions
550 g of Savoy cabbage
260 g of carrots
23 ml of rapeseed oil
35g unsalted butter
3 g of sugar
5 g of salt
2 g of ground pepper
1.38 l vegetable broth
700 ml partly skimmed milk

PREPARATION:

STEP 1
Prepare the vegetables: Thinly slice the onions; finely chop the cabbage; grate the carrots.
2ND STEP
Heat oil and butter in a saucepan over medium heat. Add vegetables, sugar, salt and pepper. mix everything, cover and cook 25 minutes over very low heat.
STEP 3
Add the stock, bring to boil, cover and simmer 15 min. Add milk, heat and check the seasoning.
STEP 4
Serve soup in bowls.
