CHICKEN BASQUAISE

INGREDIENTS

1 chicken (not farmers)
3 cloves of garlic
3 onions
700 g of red peppers
1 kilo of tomatoes
bouquet garni
olive oil
salt pepper

PREPARATION

STEP 1
The traditional recipe of Basque chicken begins by cutting your chicken into pieces. If you are not comfortable with this technique, you can also choose to buy directly thighs and white precut chicken. Cut suite peppers in half, remove the seeds under running water and cut them into strips. In a separate bowl, crush the garlic and onion.
2ND STEP
Peel the tomatoes, cut them and remove the hard internal parts.
STEP 3
Prepare a pot that you shoe with heat four tablespoons of olive oil. Pour in the garlic, onion and peppers and fry gently for about 5 minutes making sure to mix constantly with a wooden spoon. Then add the tomatoes and cook covered for 20 min at low heat so the mixture simmers quietly and releases all the flavors own Basque chicken.
STEP 4
Meanwhile, season the chicken pieces and brown on all sides in a pan with olive oil. When the peppers tomato mixture is ready, add to preparing the chicken pieces and bouquet garni.
STEP 5
Salt and pepper again to accommodate the taste for convenience and bake 35 minutes so that the chicken takes the color and flavor of spices. Finally, enjoy your hot Basque chicken that you can accompany with basmati rice or wild rice mix.
