Chicken salad

Preparation: 20minutes> 
Cooking: 30minutes>
 Ready in: 50minutes 

Ingredients:


3 eggs
150 g of bacon
1 green salad
400 g chicken cooked and cut into pieces
2 tomatoes, cut into pieces


100 g roquefort or gorgonzola
1 avocado peeled and minced
3 chiseled sides
A vinaigrette of your choice

Method of preparation:

1/ Place the eggs in a saucepan and cover with cold water. Bring to a boil. Cover, remove from heat and leave eggs in warm water for 10 to 12 minutes. Drain, peel and cut into small pieces.
2/ Cook the bacon. Spread the salad over the plates. Add the chicken, eggs, tomatoes, cheese, bacon, avocado and cives. Season with the sauce of your choice.

Nicoise salad

Ingredients:
- 1 salad type Scarole or curly
- 250 g of cherry tomatoes
- 1 large can of sliced ​​tuna
- 3 hard boiled eggs
- 100 g of black olives
- 8 potatoes Grenilles
- salt pepper
- olive oil
- lemon juice, balsamic vinegar
- 1 tablespoon parsley and chopped chives
- 10 fresh basil leaves

Preparation of the recipe :

Steam the potatoes for about 10 minutes.
Let them cool down.
Wash tomatoes and salad.
Strain the salad and arrange it in a salad bowl.
Cut the cherry tomatoes and add them, as well as the drained and sliced ​​tuna.
Add the potatoes cut into slices.
Chop the eggs and cut them into 4, add them to the salad with the black olives.
Prepare the sauce with 3 tablespoons of oil, 1 tablespoon of lemon juice and 1 of vinegar, salt, pepper

Mesclun salad with candied squash and Parmesan cheese


Preparation time: 20 minutes
Cooking time: 10 minutes

Ingredients (for 2 persons):
For the salad:
- 500 g of mesclun salad
- 150 g squash
- 100 g of parmesan in shavings (your cheese maker will do it with pleasure!)
- 15 g of sugar
- 30 g butter
- 1 tablespoon of balsamic vinegar
- salt pepper
- 1 pinch of nutmeg

For the vinaigrette:
- 1 teaspoon of mustard
- 30 cl of olive oil
- 2 tablespoons balsamic vinegar
- salt and pepper

Preparation of the recipe :

Wash the salad and squeeze.
Remove the skin from the squash. Cut the squash into small strips 2 mm to 4 mm thick
Melt the butter in a frying pan over medium heat. Add sugar and squash slices and pinch of nutmeg. Cook the slices for 5 to 10 minutes. They must be cooked but not boiled, slightly caramelized.
Stir gently. At the end of cooking, add the tablespoon of vinegar, a pinch of salt and a few turns of pepper mill. Book and let cool.
Prepare the vinaigrette by adding all the elements and beating with a fork. The taste of balsamic vinegar must stand out.
Make the plates by putting the salad, the squash pieces still warm and the shavings of Parmesan cheese. Season and taste!

Carrot salad with orange

Preparation time: 20 minutes

Ingredients :

> - 400 to 500 g carrots
- 2 oranges
- 1 lemon
- 1 tablespoon orange blossom water
- salt
- An olive oil (optional)
- A few sprigs of cilantro (optional)

Preparation of the recipe :


Peel and finely grate the carrots. Put them in a bowl.

Pasta salad with tuna, tomato and corn

INGREDIENTS

250g of cooked pasta

200g natural tuna 

3 tomatoes

1 c. vinegar
salt pepper

200 g but

1 garlic clove

3 c. tablespoons olive oil

PREPARATION
STEP 1
Mix in a bowl of vinegar, olive oil, chopped garlic, salt and pepper.

2ND STEP
Add cooked pasta, chopped tomatoes, corn drained and flaked tuna.
